Evaluation of the Applicability of Michelin Green Star Criteria by Chain Businesses: The Case of İstanbul

Abstract

With the increasing awareness of sustainability, the Green Star, which was introduced at the launch of the Michelin Guide France selection in 2020 and is now applied in all guide selections, has become the new rank of the Michelin Guide. In this context, unlike the privileges of the Michelin Guide, the Michelin Green Star can be awarded to all types of restaurants participating in Michelin Guide selections. It encourages stakeholders and their concrete initiatives to support the transformation of the food and beverage sector, raise awareness and accelerate actions taken on sustainability. The aim of this study is to examine the perspective created by the Michelin Guide, which includes Istanbul as the 38th Destination, in chain food and beverage establishments serving in various locations of our country, and the awareness they have gained and the actions they have taken. In this study, semi-structured interviews were conducted with a kitchen management team of 11 people working in a chain food and beverage establishment in the centre of Istanbul. It was concluded that the participants do not have sufficient knowledge about Michelin Green Star, but they encourage stakeholders and their concrete initiatives to raise awareness and accelerate actions to support the transformation of the sector regarding sustainability.
